Strawberry cupcake recipe

Early summer is just around the corner! The first fruits are ripe in the garden and waiting to be harvested!

Strawberries are a particularly popular treat! Many people with a sweet tooth can’t get enough of the juicy, aromatic red berries! The strawberries are best eaten straight away, but are also very popular as jam or as a cake topping. The strawberry, which in botanical terms is actually a fruit for gathering, is rich in vitamin C and minerals and has hardly any calories to boot.

Did you know that our ancestors were already eating wild strawberries in the Stone Age?

In ancient Rome, the writers Virgil and Ovid praised the wonderful aroma of the red fruit. Strawberries were also popular in the Middle Ages and were grown in large fields. Even though strawberries are available all year round these days: Which fruit would be better suited as a symbol for the approaching summer?

What do you need to prepare the strawberry cupcakes?

The following quantity of ingredients makes about 12-14 cupcakes:

You need

Ingredients for the dough:

150 g flour
1 ¼ tsp baking powder
½ tsp baking soda
1 pinch of salt

2 eggs
170 g sugar
2 tsp vanilla extract
120 ml unflavored oil (e.g. sunflower oil or rapeseed oil)
120 ml buttermilk

Ingredients for the cream:

200 g curd cheese
200 g cream cheese
2 tbsp strawberry jam
200 ml whipped cream

Ingredients for the filling:

How are the strawberry cupcakes prepared?

This is how it’s done:

A little tip first: take all the ingredients out of the fridge early – they are easier to process when they are at room temperature!

  • Preheat the oven to 175 degrees top/bottom heat.
  • Mix the dry ingredients and sieve into a bowl. Mix the whole eggs briefly in a food processor, then add the sugar. Now mix the mixture vigorously for about half a minute. Set the speed to medium and mix in the vanilla extract and oil.
  • Now add the buttermilk and flour mixture alternately to the dough on a low setting. Please make sure that you only fold in small amounts at a time and only stir briefly enough for the ingredients to just combine!
  • The next step is to pour the fairly liquid batter into the ramekins.
  • ATTENTION: Please only fill the tins halfway – the cakes will rise! The baking time is about 17 minutes.
  • For the cream, mix the curd cheese, cream cheese and strawberry jam and fold in the whipped cream. Now pour the mixture into a piping bag with a star-shaped nozzle and chill.
  • Cut a small notch in the cooled cupcakes with a sharp knife and fill each with 1 tbsp of strawberry jam. Take the piping bag out of the fridge and start decorating the cakes.
  • The cupcakes look particularly pretty if you decorate them with a small strawberry and add a few chocolate sprinkles on top. Let your creativity run wild!
