We would like to share this delicious, traditional recipe, which we also bake for our family every year, with you today and conjure up a little Tyrolean Christmas atmosphere in your home.

Christmas magic with tradition: Linz eyes like grandma’s
Whether they really come from Linz or not, Linzer Augen have long held a firm place in the heart of the Advent season here at the Wilder Kaiser. Filled with fruity apricot jam and delicately dusted with powdered sugar, they are not only a treat, but also a piece of home.
And best of all, they are wonderful to prepare together with the family – preferably on a snowy afternoon in your cozy vacation apartment with a view of the surrounding Wilder Kaiser mountains.

How to make linzer eyes particularly well
The fine shortcrust pastry is the soul of these cookies – and, as with many Austrian recipes, you need to be a master of the art. It is important to work quickly so that the butter remains cool and the dough retains its fine structure. After kneading, give the dough a break in the fridge – wrapped in cling film to prevent it from drying out. When rolling out and cutting, use flour sparingly so that the cookies do not crumble later.

Our favorite recipe for Linzer eyes
1. ingredients:
- 300 g plain wheat flour
- 200 g butter
- 70-100 g powdered sugar
- 80 g finely grated almonds
- 2 yolks
- 1 pinch of salt
- Apricot jam for filling
- Powdered sugar for sprinkling
2. preparation:
Cut the butter into pieces and “crumble” with the flour. As soon as the pieces of butter are no longer visible, add the sugar, almonds, egg yolks and salt and knead quickly to form a smooth dough. Shape the dough into a ball, cover (with cling film) and leave to rest in the fridge for at least 30 minutes.
Then roll out the dough to a thickness of 3-4 mm and cut out the same number of cookie bases and perforated lids. Place on a baking tray and bake at 190 °C for about 8-10 minutes – they are ready as soon as the edges start to color slightly.
Spread the bottoms with jam, carefully assemble with the perforated tops and sprinkle with powdered sugar. The cookies are particularly delicious if you add a touch of rum to the jam and fill them with lots of jam. If you store the finished cookies in a cool place in a cookie box for 24 hours, the cookies will have time to soak up the liquid from the jam and become wonderfully soft. Then they are ready to eat!
